Happy Father’s Day

Who would have known over 10 years ago when I met you that I’d be lucky to spend the rest of my life with you and that you would be the best Daddy there is for our girls’ & family.

You are always there to hold their hands’ and encourage them when they are afraid or unsure of new experiences.  You help build their confidence and show them that there isn’t anything they can't do, even when it’s difficult.  It’s ok to fail but keep trying and they will succeed.

You find the fun in everyday things and are always coming up with new things to do with the girls’.  You have patience to teach them new skills and sports.  I have no doubt that as our girls’ get older and they continue learning by your side that they will be well rounded and able to do all, plus more, that a man can do around the house – with your shared expertise & knowledge.

You are very hands on, even styling their hair or painting their nails when the occasion arises.  They are treated like princesses and I know that by your example they will see how they deserve to be treated as they get older.

You are the ying to my yang when it comes to parenting our girls and I’m ever so blessed to be sharing this wonderful and hard journey that we’ve embarked on and will continue through – for years to come.

Great-Gramma's Never Fail Pie Crust

Yesterday, little one and me went over to Gramma's to make some pumpkin rolls & try out Great-Gramma's Pie Crust. I normally just buy the frozen or refrigerated pie crusts but this year I wanted to make my own and Gramma shared her mom's recipe with me.  So simple and fantastic that wanted to share.  Really - I expected this elaborate process, but in 5 mins the dough was made, couple mins of rolling and we were done!

"Never Fail Pie Crusts"
- Sift together 3 cups of flour, 1 tsp of salt and 1 cup of shortening.















Next:
- 1 well beaten egg, 5 tbsp of cold water, 1 tbsp of vinegar.
















We then divided the dough into 3rd's.  Rolled out the 2 pie crusts for some pumpkin pie.
















To take easily off the mat/table, we slid a spatula underneath it, folded it loosely in half and then picked it up into the pie plate.  Pinch up the excess dough, if any hanging over the edge just swipe that off.
















We had some left over dough and decided to make some sweet rolls.  Roll out the dough, spread butter, we added some homemade apple butter, and then sprinkle with cinnamon sugar.  Roll it up and then slice it into pieces.  Place in a buttered/cooking spray dish @350 bake until tops are golden. 15-20 mins.
















I love going over to Gramma's during November and December for pumpkin roll making and cookie baking.  And I'm glad that she shared this recipe so I can continue making it and pass down to our girls some day.

Thankful Tidbit 

#18 - To still have my Gramma around.  She just finished her 2nd bout of chemo & radiation (last month) in the past 3 years and as we get older, I'm more appreciative of the wonderful memories with her and each holiday we still get to spend with her.

Weekend Wrap-UP

What a nice weekend it's been. I swear even though I don't "technically" go to work during the week anymore, there's just something about those weekend's that makes the time even more enjoyable.

Little one has pretty much completely made the transfer to a toddler bed. This is a good transition b/c once in the new house she'll be in a twin bed. Only down side - is she keeps waking me up earlier and earlier - today it was 6:02, the sun wasn't even up yet! - although I think another part of today's was she really wanted to see Landyn b/c the first words out of her mouth were Can I play with him now? I told her tonight that if it's dark she needs to stay in bed, lols, we'll see how tomorrow morning goes.

Want to wish my sister-in-law a Happy 20th Birthday today!

We celebrated today with my cousin and his family on his son's baptism. It's always nice to visit the family - especially since we don't get to see each other very often.

Ramblings at it's Finest

No specific reason for this post. Just ramblings of things I've been thinking about. One of the main things is the friends in my life. Which pretty much are zero. Yes I have the oh, 3 people I could call up if I need to, but I've lost touch with my friends. I miss talking to them daily/a couple times a week. Is it me? Do I make people just stop talking to me for some reason? I mean look at my history and I have a handful of friends who seriously stop talking to me for no reason that I can see and even with me trying to get in touch, no response. I'm just not sure what to think of it. Work. This company makes absolute no freaking sense to me. I mean seriously I don't think you can do anything to get fired from this place. Even if you DO get fired, they rehire you?! I just do NOT get it. But then it's their money, so why should I care. I mean I go there for 4 hours and do maybe an hours worth of work total, just because there is NO work. I'm A'okay to get paid for sitting around talking with the other ladies. Families. They are definitely the Catch 22 of all Catch 22's. You can call on them and they will be there in an instant. And yet when it comes to simplifying things people just have to be stubborn and attitude-y. As the woman on my BB say. I'm just going to put on my big girl panties and get over it. I think we all need to remember that now and then. Because there are other people in our lives besides just ourselves and our immediate families. I think we all lose sight of that at times. But hey what are you going to do really? People are how they are. It's how they've always been. There's no teaching an old dog new tricks. Emma. I will say it again, and many more times in the future, she's getting TOO BIG! Tonight she counted to 16!!! I mean seriously, it's the cutest freaking thing ever to hear her count...but 16! I just can't believe it. And the hubs wants me to shape up her hair. So, I'm thinking of bringing up her length, and this way, her bangs will actually be closer to the length of her hair. I'm sad to think about her getting her hair cut, but then also excited. And what do I think of except for saving some for a baggie so I can scrap about it. Lols. Speaking of scrapping reminds me of wanting to clean out our basement and re-do it some. Perhaps some paint, some fabric curtains in the doorways to the ugly parts. And then I get excited thinking about our remodeling this coming winter. Switching rooms with Emma. What colors/theme should Emma's new "big girl" room be? I'm thinking of some bright colors. Getting some chalkboard paint and making an area for her to color with. An activity center. Actual bookshelves instead a big plastic container. I'm excited. I'm thinking I'm going to start hunting at Home Depot for their oopsie cans, and perhaps we'll get lucky with a color? Who knows though. And to end this alls I've got to say is "Cheers"! Lifting my glass and tilting it towards you before taking a sip.

8.23.2008 Lukunich Wedding

Saturday the 23rd we headed over to my Uncle's house for his wedding celebration. The decorations were nice, love there walkway with the balloons, the ceremony was suprisingly very short and the food was wonderful. Fun times were had after playing games and just enjoying time with the extended family catching up.
